Open with 6.7 vs. 7.0

I opened one stack one time with version 7.0. Now, Finder: Get Info: "Open with" has been changed to version 7.0 for all my archived stacks. I'm not ready to make that change.

I've tried switching a folder full of stacks back to Finder: Get Info: Open With version 6.7, then tried the "Change All" button. It doesn't work.

I'm assuming this works as intended, and there's a good reason for it. In any case, I don't want to have that conversation.

I have dozens of archived folders, each containing a dozen or more stacks. How do I change them all back to 
"Open with" version 6.7?
