Yes, on that basis you'll be happier with Gnome than with KDE - its much
more similar to the Mac interface than KDE.  And also on that basis, don't
go with Ubuntu, go with Mandriva One, Gnome version, as your first outing. 
The reason is, it comes with a whole very well organized suite of gui
management tools, and there is also a proper several hundred page user guide
available from the Mandriva site.  The guide is oriented to KDE, but most of
it will still apply.  You can always add KDE from the software management
centre and play with it. And One is also a live CD so you can play with it
first. 

Right now there is an issue with KDE.  It is on 4.1.x, which is a
substantial difference from the 3.x line.  The first release of 4.x was
greeted with dismay.  Since then its improved a lot, but you would probably
be better off waiting for 4.2 before trying the 4.x line.  This means going
with a distro that still has 3.x in its repositories, which means, if you
want to try KDE, that you should go with Mandriva Gnome One 2008.1, and not
2009.

PCLinuxOS also uses the Mandriva control center, its also a live CD, and its
KDE 3.x based.  That is a serious candidate too, if you decide you prefer
KDE.  A bit unlikely that a Mac user would, though.

You will end up with some other distribution probably.  But the important
thing is to make the first try as easy on yourself as possible.

In addition to Gnome and KDE, but only when you are thoroughly comfortable
with Linux itself, you should try Fluxbox.  It is contrary to just about all
the HIG conventional wisdom, but once you get used to it, and that's the
key, its fast, super easy to use, and keeps completely out of your way. 

Some KDE apps are better than the Gnome equivalents.  KMail and Evolution
are comparable.  Kate is a better editor than Gedit.  Geany is also very
nice.  k3b is a better CD burner than whatever comes with gnome.  kjots is
very useful.  Tellico.  You can get these and a whole bunch more from the
Mandriva repositories via the control center.
