With portable HDDs selling at around US$50/GB multiple redundant backups 
are easy, esp. with:

rsync -avz user at server:/path/to/server/folder/  local/folder/

rsync is preinstalled on OS X and Linux; Windows users can install 
Cygwin to have it (and other great bash tools).
