QuickTime issue with 5.5.2 (Mountain Lion)?

yes, selecting "All files" SHOULD show all files!

It worked after I UNchecked "Controller" in the inspector and CHECKED it again!?

Try the trick with un-/checking the "Controller" checkbox, worked here.
