Well, for the Mail app in OS X, you can find it in the Mail preferences file
(/users/<user>/library/preferences/com.apple.mail.plist) in the section
marked with <key>DeliveryAccounts</key> or under the section marked
<key>MailAccounts</key>.

For other mail apps, I don't know...
