Probably, you'll need an external for that.

> (2) Can the volume of a iOS Player Control be set? If not, can the Application Instance volume be set? If not, can the device volume be set?

Check the *mobileSetSoundChannelVolume* and *mobileSoundChannelVolume* from dictionary.
