Searching within variables in LC server

What is the equivalent to "find" for variables? I want to parse a string in
a variable to extract a chunk between two markers. This is easy in PHP.

If it was in a stack I could just dump it into a field and use "find" and
"foundchunk" but fields are not supported in server.

I assume there's some obvious way to do this.
